In a small bowl, combine garlic, ginger, soy, and sesame oil. Set aside. In a large skillet heat oil for 1 minute and add pork or chicken and brown. Add coleslaw and stir to combine. Add the sauce mixture to the pan. Stir and cook for about 3 to 5 minutes. When the cabbage just begins to wilt but is still crunchy, remove from heat. Top with green onions.
