Stir fried Tofu with Green Beans

Instructions

Step 1
Slice block of tofu into 3/4 inch cubes. Spread on 3 layers of paper towels and let drain 20 minutes.
Step 2
Mix together vegetable broth, 3 tablespoons soy sauce, 1rice wine vinegar, brown sugar, 2 teaspoons cornstarch, sesame oil.
Step 3
Pat dry tofu and transfer to a bowl. Add 1/3 cup cornstarch and gently coat tofu with a rubber spatula until there is no dry cornstarch left.
Step 4
In nonstick 12 inch skillet add 2 tablespoons oil over medium heat for 1 minute. Add tofu and stirring often, cook until tofu is golden brown. 10-12 minutes.
Step 5
Transfer to paper towels.
Step 6
Add 1 tablespoon oil and green beans to skillet and return to medium heat. Cover and cook until green beans are bright green, about 3 minutes. Remove lid and continue cooking until beans are spots brown all over stirring occasionally.
Step 7
Add tofu, green onions, garlic, and ginger to skillet. Whisk broth mixture to recombine and pour into skillet. Cook, stirring often until sauce is thickened, about 1 minute.
Step 8
Serve with rice.
