Instructions
Step 1
Place all of the ingredients into a food processor or blender.
Step 2
Blend until they form a sticky, chewy mixture.
Step 3
Spoon the mixture into a rectangular or square baking dish.
Step 4
Flatten the surface of the mixture.
Step 5
Sprinkle over extra lemon zest and gently press it into the mixture.
Step 6
Place in the freezer for about 20 minutes, or until set.
Step 7
Cut into square slices and enjoy.
Step 8
Store in an airtight container in the freezer for up to 7 days.
