Instructions

Step 1
Thinly sliced onion into rounds and separate individual rings.
Step 2
Thinly slice half the tomato and coarsely chop the rest. Coarsely chop the avocado into chunks.
Step 3
Combine mince and chipotle in a bowl, season with salt. Shape into two patties.
Step 4
Heat oil in fry pan over med-high heat, cook onion. Remove from pan.
Step 5
Heat oil in pan and cook the patties for 3 minute each side, covering the pan for the second side. Remove and rest for 3 minutes.
Step 6
Combine half the aioli and balsamic vinegar and Dijon mustard in a bowl. Add the avocado, tomato and rocket and season with salt and pepper.
Step 7
Halve buns and place under grill. Spread buns with remaining aioli.
Step 8
Stack burger with tomato, patty and salad.
