Instructions
Step 1
1. Soak eight wooden skewers in water for 15 minutes
Step 2
2. Stir together 1/4 cup cilantro, soy sauce, sesame oil, honey, sesame seeds and black pepper in a large bowl. Reserve half of marinade. Add tuna to remaining marinade in the bowl and toss to combine and chill for 15 minutes

3. Remove tuna from marinade. Place marinade in a saucepan and boil for two minutes
Step 4
4. Thread tuna, Peppers, mushrooms and eggplant onto skewers, beginning and ending with tuna
Step 5
5. Heat a grill pan over medium high. Coat with cooking spray. Grill skewers until charred, three to four minutes, turning once
Step 6
6. Brush with cooked marinade during last minute of grilling
Step 7
7. Please skewers on a plate and top of the reserved marinade and remaining 1/4 cup cilantro
