Bajan Pumpkin Fritters

Pumpkin is frequently used in many Bajan dishes such as soups, sauces, cookies and of course the famous fritters. If unavailable where you are, butternut squash or another orange flesh squash can be used as a substitute. Ingredient notes: - Canned pumpkin can also be used here and will omit the need for a blender- simply mix ingredients by hand - To cook the pumpkin/squash yourself, it can be peeled and steamed - Alternatively, to avoid peeling the pumpkin when raw, you can cut into chunks and cook in a hot oven until soft, covered with foil. When cool, the flesh can be scooped out and the skin discarded - A pinch of nutmeg can also be added to the fritter recipe if you wish These fritters last ok for a couple days in the fridge. They can be toasted, microwaved or warmed in the oven! Recipe tested and photographed by Miriam

Instructions

Step 1
Place first 7 ingredients in blender and process on low speed to blend
Step 2
Sift flour and baking powder, add to blender, and process a few seconds to make batter of consistency for frying
Step 3
Heat some oil in a frying pan and drop in spoonfuls of the batter. Cook for 3-5 minutes on each side or until crisp and golden brown, turning once
Step 4
Make the cinnamon sugar mixture by combining the 1/2 cup sugar with the 2 tbsp cinnamon
Step 5
Drain on paper towel and transfer to a hot serving dish, dusting with the cinnamon sugar mixture before eating
