Step 1
Heat grill or grill pan over medium. In a large bowl, toss onion, lime juice, and pinch each salt and pepper, then toss with mango and cucumber. Let sit, tossing occasionally, at least 10 minutes.
Step 2
Cut Chicken breasts thin. Meanwhile, in a small bowl, combine oil, jerk seasoning, and 1/4 teaspoon salt, then rub all over chicken.
Step 3
Grill until just cooked through, 2 to 4 minutes per side. Fold cilantro into cucumber salad and serve with chicken and lime wedges if desired.
