Instructions

Step 1
Slice chicken thighs into thin strips, add to a bowl and coat with 1 tablespoon cornflour and a splash of soy sauce, set aside for 5 minutes while you make the sauce
Step 2
In a saucepan fry off 4 diced cloves of garlic with about 6-7 g of finely chopped or grated ginger.
Step 3
Into the same pan add about 2 tablespoons of set honey, a splash of soy sauce, a splash of rice vinegar, the juice from 1 1/2 medium oranges and top up with a cup of water and stir together on the hob over a medium heat
Step 4
Once the mixture has reached a boiling point add a tablespoon of cornflour to the saucepan and stir together to remove any lumps of cornflour, keep stirring till the sauce thickens
Step 5
In a separate high sided saucepan heat cooking oil on a high heat, you don't need to deep fry, but more than you would use for an ordinary shallow fry, you want the oil to cover at least half the height of the chicken strips
Step 6
Crack and beat the egg then add to the bowl with your chicken. Add a little more cornflour if needed, Mix through to ensure an even coat
Step 7
Fry in the pan till cooked through, this should give you a nice crispy batter, drain the oil and season with a small pinch of salt
Step 8
add your cooked chicken into the sauce, along with drained tinned water chestnuts, and cook together for 2-3 mins maximum, just enough to ensure an even heat through the dish
Step 9
Serve with cooked rice, and Garnish with sesame seeds and sliced spring onions
