Instructions

Step 1
Make the white roux base. Melt butter into a medium sauce pan, add flour and cook for one minute
Step 2
Add hot milk to the flour mixture to form the roux. Remove from the heat and add the egg yolks, cheese and spices
Step 3
Whip egg whites until soft peaks form

Fold cheese base into the egg whites in 3 batches
Step 5
Add soufflé base to a buttered ceramic dish
Step 6
Bake at 425 degrees until puffed and crispy. Depending on the size of your ceramic dish, you may need more cook time for larger dishes
