Step 1
Chop the onion, tomato and cilantro finely and set aside
Step 2
With a mortar and pestle, start mashing the garlic clove until pasty (if you’re not using a mortar and pestle, just chop it as finely as possible on a cutting board)
Step 3
Add the avocado to the mortar (or bowl) and mash with the pestle (or a fork) until your desired consistency. It can be chunky or smooth as you like
Step 4
Add to the bowl the rest of the chopped ingredients and adjust with salt, pepper and lime juice before serving. Enjoy!
