Instructions
Step 1
Put the beans into a bowl and fill it with water enough to cover them.
Step 2
Add 1 level teaspoon of salt, stir lightly, and set them aside to soak for 8-12 hours.
Step 3
Then drain them, rinse them with very cold water to remove the salt, drain them again, and set them aside.
Step 4
Place a pot over high heat.
Step 5
Cut the sausages into rounds and add them to the pot. If they are not very greasy, add 1 tablespoon of olive oil. Sauté them until golden brown on both sides. Remove and set aside.
Step 6
Place the same pot over high heat and add 2 tablespoons of olive oil.
Step 7
Cut the carrots into half-moons, the celery into small pieces, and the onion into large pieces. Add them to the pot and sauté.
Step 8
Add the garlic into slices, the tomato paste, and mix.
Step 9
Deglaze the pot with the wine and, once it is evaporated, add the beans, the water, the bay leaves, the canned tomatoes, and cover with the lid.
Step 10
Simmer over medium heat for 1 ½-2 hours.
Step 11
About 20 minutes before the food is ready, add the vegetable bouillon cubes, the sausages, and the celery leaves finely chopped.
Step 12
Serve with feta cheese, olive oil, oregano, bread, and chili flakes.
