Air Fryer Onion Bhajis

These vegan onion bhajis are so budget-friendly and easy to make. Packed with protein and tasty spices, they can be made in an air fryer with little to no oil. Please give them a go and let me know what you think!

Instructions

Step 1
Cut the onion in half and finely slice it. Reserve.
Step 2
Chop and deseed a green chilli, then finely chop or pound it. Reserve.
Step 3
Dry toast the coriander, mustard, and cumin seeds. Crush to a powder using a pestle and mortar or a spice grinder
Step 4
Finely chop the coriander leaves
Step 5
Pour the chickpea flour into a large bowl, and add the cornstarch, ground spices, turmeric powder, salt, and coriander leaves. Whisk to combine.
Step 6
Add the chopped red onion and chilli. Mix to combine.
Step 7
Cover the mixture and let it rest for a minimum of 1 hour, or up to 4 hours if possible.
Step 8
The chopped onion will release its moisture and make the mixture somewhat pliable. If it looks too dry, add 1 tsp water at a time and mix. Do not overdo this step, or the bhajis could turn out soggy.
Step 9
Preheat your air fryer for 5 minutes. Lightly coat the basket with oil (I used olive oil), then place small scoops of the mixture onto it, then flatten them. Allow enough space between the bhajis so they can fry evenly.
Step 10
Drizzle a small amount of olive oil over the bhajis. Air fry for 10 to 15 minutes at 220C, turning halfway.
Step 11
Serve with mint raita, mango chutney, and chopped coriander for pure bliss. Enjoy!
