Instructions

For basic white premix

Step 1
Heat ghee and roast the whole spices until just fragrant. Set aside.
Step 2
Dry roast each of the ingredients listed under second header SEPARATELY for 3-4 minutes. Set aside to cool. The seeds tend to pop, that's ok.
Step 3
Blend nuts and seeds mixture with ingredients listed under the 3rd header. Pulse until reasonably fine. Careful not to overprocess, or you'll end up with cashew butter. Store in airtight container with the roasted whole spices.

For red or yellow premix

Step 4
In 1 portion of the basic white premix, mix the ingredients listed under red or yellow premix. Store airtight.

For the gravy

Step 5
Bring water, butter and salt mixture to boil
Step 6
Mix 1 portion of premix with 1 cup milk. As to boiling water AND KEEP STIRRING (burns easily).
Step 7
When thickened, stir in vegetables/paneer cubes/ veg or meat balls etc and heat for a couple of minutes.
Step 8
Garnish with cream and cilantro.
