Instructions
Step 1
In a skillet, brown the sausage over medium heat.
Step 2
In a prep bowl, toss potatoes with olive oil and desired spices.
Step 3
Once sausage is browned, remove to paper towel lined plate or bowl.
Step 4
Add butter to the same skillet used to brown the sausage. Once melted, throw in the seasoned potatoes. Cook potatoes until browned and fork tender (about 20-25 minutes for me).
Step 5
Add sausage back to potatoes.
Step 6
Serve in bowls topped with a runny, fried egg and maybe a little hot sauce.
