Firstly Make the one pot oven risotto:

Use a large deep oven dish

Fine dice onion and garlic

Peel and dice squash

Add all ingredients to oven dish

Oven cook 180°c 40-50 mins

Stir in 50g strong cheese (optional) cool

Meanwhile Prep veg for filling:

Remove seeds, scoop out insides pre cook Peppers in oven 180°c for 5 mins or microwave 2 mins

Place veg on oven tray ready for filling
Step 11
Fill the vegetables bake for 30 mins on 180°c
Step 12
Serve with rocket and balsamic
