Easy, Cheesy Chicken Parmesan Meatballs

Ingredients
8 servings
Extra Virgin olive oil
for oiling the baking sheet
½ cupmilk
preferably whole
½ cuppanko bread crumbs
½ cupparmesan
freshly grated, plus more for serving
⅓ cupfresh flat-leaf parsley
minced
2 tablespoonsshallots
minced
1 teaspoongarlic
finely minced
½ teaspoonsdried oregano
Kosher salt
or coarse
ground black pepper
to taste
2 poundsground chicken
0.5 poundmozzarella
cut into 1/2-inch cubes
1 jartomato sauce
1egg
large
16 ozpasta
uncooked
Instructions
Step 1
Preheat the oven to 375°F.
Step 2
Spray a rimmed baking sheet with nonstick spray or coat lightly with EVOO oil.
Step 3
Mix together the milk and egg in a large bowl, then stir in the bread crumbs.
Step 4
Add the Parmesan, parsley, shallots, garlic, oregano, and salt and pepper and stir to combine well.
Step 5
Add the chicken, and use your hands to mix everything until very well blended, trying not to squish the mixture too much.
Step 6
Form the mixture into 1 1/2-inch meatballs, tucking a cube of mozzarella into the middle of each one, then sealing it in with the chicken mixture.
Step 7
Place the meatballs on the baking sheet.
Step 8
Bake until cooked through and the cheese inside is all melty, 16 to 20 minutes (cut one open to test; that one is yours).
Step 9
Serve with the tomato sauce and additional Parmesan, sprinkling with fresh basil if desired.
