Step 1
Finely chop the garlic and chilli and slice up the onion, sweet red pepper and chicken. Heat a tablespoon of olive oil in a large frying pan and cook these ingredients over medium heat for 5 minutes. In a large bowl mix one tablespoon of oil, lemon juice, paprika and coriander to make the marinade. Transfer the contents of the frying pan into this marinade, mix well and leave for 5 minutes. Return the contents of this bowl back to the frying pan, season with salt and cook on a moderately high heat for a further 5 to 10 minutes until the chicken has browned and is fully cooked through. Wash the spinach and heat the tortillas as per the products' instructions. Split the fajita mix into four equal portions and spoon this into the centre of each tortilla, adding the spinach, salsa and mozzarella. Roll or fold to serve
