3 lbboneless skinless chicken thighs
cut into bite sized pieces, heavily salted and peppered
1sweet onion
diced
4cloves garlic
2 Tbspfresh ginger
chopped
29 ozcan crushed tomatoes
15 ozcan petite diced tomatoes
1 ½ cupsplain yogurt
4 Tbsplemon juice
1 cupheavy cream
1 Tbspcornstarch

Instructions
Step 1
In batches, sauté the chicken in olive oil over medium high heat until chicken is browned. Remove chicken to a bowl. Leave olive oil and crispy bits on bottom of pan.
Step 2
Add onion, garlic, ginger, and seasonings to pan. Sauté (adding olive oil if necessary) until onions are translucent. Deglaze the pan using a small amount of white wine or chicken broth. Add lemon juice.
Step 3
Add chicken, crushed tomatoes, diced tomatoes, and yogurt to the pot. Heat on medium high until bubbling. Reduce heat to medium low, cover, and simmer 30 minutes.
Step 4
Mix corn starch with heavy cream. Stir into pot. Simmer 5 minutes.
Step 5
Serve over long grain white rice, topped with cilantro and chopped Gouda.
