Ingredients
2 servings
1Pork chop
thinly sliced
1red bell pepper
sliced
1onion
sliced
6asparagus spears
cut into thirds
10Green beans
cut into bite sized pieces
2garlic cloves
sliced
1 cupbroccoli florets
1 handfulspinach
0.5 handfulbeansprouts
1 ½ cupswater
2 tspoil
1 tspginger powder
½ tspblack pepper
fresh ground
3 Tbsplight soy sauce
3 Tbsprice wine vinegar
½ tspdried chilli flakes
optional, adjust to your liking
Instructions
Step 1
In a wok, add a teaspoon of oil, or around 10 sprays of squirt oil. Heat until steaming a little, then throw in your thinly sliced pork chop. When it's very nearly cooked, add some water to the wok to deglaze the fond that has collected on the bottom. When the water is almost, but not quite boiling, put the pork to the side, and don't discard that water!
Step 2
Add another teaspoon of oil, or another 10 sprays. Add your onion, red bell pepper, asparagus, and green beans. Allow them to saute until the onions look translucent
Step 3
Add your garlic and saute for 30 seconds, or until fragrant
Step 4
Add the beansprouts and broccoli. Re-introduce the pork and all the water, mixing until it's all combined. Add a bit more water to allow the harder vegetables to steam and soften.
Step 5
Add your seasonings to the water and mix to combine
Step 6
Allow your stir-fry to simmer over medium heat and for the water to reduce
Step 7
When it's reduced to your liking, add your spinach. It may look like it's too much and that you've added it too late, but it'll wilt down to basically nothing in less than 2 minutes
