Instructions
Step 1
Prepare the bulgar according to the pack instructions.
Step 2
Tip into a large bowl and stir through the tomato paste.
Step 3
Season well.
Step 4
Heat a barbecue or griddle pan.
Step 5
Drizzle the aubergines and red pepper with the oil and cook for 5 minutes on each side until lightly charred.
Step 6
Stir the aubergines and red pepper into the bulgar mixture, then season and stir through the basil and serve.
