1. Place a heavy based saucepan on a medium heat and add the butter and oll. When the butter has melted, add the onion, carrot, garlic and ginger, along with a couple of pinches of salt and the chill flakes. Cook, stirring. for 8 minutes, or until the vegetables have softened. Add the curry powder and turmeric and cook for 1 minute stiting. then add the coconut milk, stock and lentils. Bring to the boil, then reduce the heat and simmer for 15-20 minutes, or until the lentils are tender. Remove from the heat
2. Using a hand-held blender. carefaly bitz the salf unfit.
it is nice and smooth. Test for seasoning, adding salt, blag pepper or lime juice as required, then divide between 4 bowls. Top with chopped coriander (if using) alongside strips of naan bread for dipping.
