Curried Winter Squash Soup

This soup can be made with fresh, frozen or canned winter squash like pumpkin or butternut. I used candy roaster squash.

Instructions

Step 1
Chop onion and saute in olive oil over low heat.
Step 2
Add remaining ingredients and bring to a simmer. (If the squash is not cooked you can simmer until it is thoroughly cooked.)
Step 3
Simmer 45 minutes. Use an immersion blender to make it smooth.
