Instructions
Step 1
Grill eggplant whole over an open flame, turning occasionally, until it has fully charred outside and the flesh has collapsed and softened OR roast in a high heated oven with the flesh side down on an oiled baking sheet until the eggplant is very soft and cooked through
Step 2
Cool and drain eggplant in a colander. Make sure to open it up so that it can cool quicker. Drain off any excess juices.
Step 3
Peel off the charred skin and stem (if baked scoop out with a spoon)
Step 4
Gently mix eggplant with remaining ingredients
Step 5
Chill and serve
