1 headgarlic
separated into individual unpeeled cloves

¼ cupachiote seeds

2 tablespoonsmexican oregano

3whole cloves

1 x 3 inchCeylon cinnamon stick

2 tablespoonswhole black peppercorns

1 tablespoonwhole cumin seed

1 tablespoonwhole allspice berries

¾ cupbitter orange juice

¼ cupwhite vinegar

For pork

Marinade
Step 1
Roast garlic
Step 2
Toast spices in pan
Step 3
Blend toasted spices and garlic with orange juice, vinegar and soy sauce
Step 4
Marinade for at least 1 hour, up to 8
Cooking the pork
Step 5
Warp in banana leaves and slow cook until can shred
Step 6
If using crackpot add chicken stock until it comes up to half the shoulder
