1onion

1stalk celery

500gbeef mince
2 tbspstomato paste
400gcan chopped tomatoes
1 Tbspthyme leaves
1 Tbspworcestershire sauce
salt

water

Instructions
Step 1
Heat the olive oil in a large pan over medium-low heat. Add the onions, celery and carrots. Cover with lid and cook, stirring occasionally, for 6-7 minutes until soft.
Step 2
Remove the lid and add the garlic. Cook for 1 minute, stirring regularly, until fragrant.
Step 3
Add the beef to the pan and increase the heat to high. Fry for 3-5 minutes, stirring occasionally, until the meat is browned.
Step 4
Add the tomato paste, chopped tomatoes, thyme and Worcestershire sauce. Season with salt and pepper to taste. Stir and simmer on medium-high for 15 minutes.
Step 5
Reduce heat to low and simmer for another 20 minutes. Add some water if the sauce is getting too thick. The linger the cooks the better the flavour.
Step 6
In the meantime, make the Zoodles. Use a spiraliser, mandolins or peeler to make long, thin strips of zucchini.
Step 7
Heat oil in a large frying pan and toss the zucchini in the oil. Cook for 1 minute until tender.
Step 8
Serve the noodles warm topped with the bolognaise sauce. Finish with a good grating of parmesan cheese and fresh parsley leaves.
