Instructions

Step 1
1. Roast tomatoes until they have blistered.
Step 2
2. Add the blistered tomatoes to a blender with the garlic cloves, 1/4 of the onion, 2-3 garlic cloves, the chipotle chiles (the more, the spicier the salsa will be), 1/2 c beef broth, and 1 tbsp of salt.

3. Once borne out it to the side.
Step 4
4. Chop the zucchini, potatoes, and the remainder of the onion.
Step 5
5. In a greased pan, add the meat and cook for 5 minutes or until beef is about 60% brown.
Step 6
6. Add in the chopped onion and potato. Mix well.
Step 7
7. Add in the salsa roja and cover. Cook for 10 minutes.
Step 8
8. Add in the zucchini and combine well. Cover and cook for an additional 10 minutes or until the zucchini and potato are cooked through.
Step 9
9. Add in seasonings of choice and cilantro.
Step 10
10. Divide into 4 equal servings and serve with toppings and sides of choice. Each serving is 2 C of the guisado.
