Instructions
Step 1
Preheat grill (or grill pan) over med.-high. When hot, char corn evenly on all sides. (You could also char corn directly over a gas flame.) Cool & cut kernels off of cob.
Step 2
Well-oil grill or grill pan; place lobster tails on grill. Cook (5-10 min.) on first side, then flip. (You'll know tail is done when it's red on the side you're cooking.). Remove from heat & cool.
Step 3
Meanwhile, boil pasta in well-salted boiling water until al dente. Drain, (reserving 1/2 cup of pasta water.)
Step 4
Carefully, using kitchen shears, cut down center of the tail on both sides. Pry out lobster meat from shell. Chop into large pieces.
Step 5
Toss hot pasta, pasta water, lobster, corn, mascarpone, salt, & pepper together until mascarpone melts & evenly coats all other ingredients. Taste & adjust seasoning, as desired.
Step 6
Top with snipped chives & serve.
