🇬🇧 Welsh-Rarebit (Yorkshire Pudding)

This Yorkshire pudding recipe is proof that you can have everything, even when it's just you. I don't remember exactly how or when I came up with this; I was probably inspired by Nigella Lawson. It's good with meats and gravies, or as a savory dinner for one—especially with a green salad, or just a glass of wine and a good book. Welsh rabbit or Welsh rarebit is a dish consisting of a hot cheese-based sauce served over slices of toasted bread.

Instructions
Step 1
Brush one 6-8 oz. ramekin with oil or fat (being unafraid to leave behind grease, at the bottom especially). Place ramekin on baking sheet; transfer to Oven to preheat with oven. (As oven preheats, fat will preheat.)
Preheat oven to 450°F
Step 2
In sm. bowl, whisk together egg, flour, milk, mustard powder, Worcestershire sauce, salt, pepper, & cheddar. Rest mixture (10 min.) until oven is nice & hot.
Step 3
Carefully pour batter straight into super-hot ramekin; Bake (20 min.)—do NOT peek.
Step 4
Eat on its own or, as I like to do, with a simple side salad & glass of wine.
Step 5
For a special occasion, serve with standing rib roast/ prime rib. -JG
