Instructions

Step 1
Peel and finely slice the potatoes. Soak in cold water while preparing the sauce.
Step 2
OPTIONAL: For the crispy potato skin crisps, wash the skins, place on a baking tray, season with salt and drizzle with olive oil. Bake at 180°C (preferably with fan turned on) for 12-15 minutes until golden and crispy.
Step 3
Blend milk, broth, cashews, nutritional yeast, salt, pepper, nutmeg and thyme for the sauce. If you don’t have a powerful blender swap the milk + cashews for vegan cream)
Step 4
Add potatoes and sauce to you baking pan. Top with vegan cheese.
Step 5
Bake at 220° for 45 minutes. You can turn on the grill for the last 5-10 minutes for a crispy crust.
