Step 1
Heat oil in a large saucepan over medium heat. Add Curry paste and saute until fragrant. Gradually whisk in coconut milk; bring to simmer. Add tofu and vegetables; cook until veggies are crisp-tender.
Step 2
Top with bean sprouts, cilantro and peanuts just before serving.
Step 3
Serve over Jasmine rice or rice noodles.
Step 4
An optional addition - squeeze in the juice of half a lime (gives the curry a little "fresh summer" kick)!
