Sweet potato turkey chili

Instructions

Step 1
Before you start cooking you’ll want to chop all of your vegetables first. This will save time. You’ll also want to start a pot of water to boil for the sweet potatoes. Cut the onion and bell peppers into a small dice. Cut the sweet potatoes into a medium dice.
Step 2
Add the sweet potatoes to the boiling water and cook until soft. Drain the water and set aside.
Step 3
Heat 1 Tbsp of olive oil over medium high heat in a large pot. Add in the peppers and onions and cook for 3-5 minutes or until soft.
Step 4
Push the pepper and onion mixture to the side and add an additional 1 Tbsp of olive oil to the pot. Lightly season the turkey with salt and pepper and add to the pot. Cook until browned.
Step 5
Add the crushed tomatoes, petite diced tomatoes, beans, sweet potatoes, 1 Tbsp chili powder, and ¼ tsp cayenne pepper to the pot. Bring to a boil and taste test. Season with salt and pepper and adjust seasonings as needed.
