Instructions

Step 1
Line up your small ramekins at your work station.
Step 2
In a medium sauce pan, add all ingredients except the granulated sugar over medium heat.
Step 3
Whisk constantly and heat the ingredients to allow flavors to develop, only until you see a little steam, and small ripples along the rim of the mixture.
Step 4
Using a ladle or 1/3 cup measuring up, fill each ramekin with approximately 2 scoops.
Step 5
Allow ramekins to completely cool at room temperature, about 1 hour.
Step 6
Move ramekins to refrigerator to finish chilling, about 1 hour.
Step 7
After they have finished chilling, remove the ramekins from the refrigerator.
Step 8
One by one, top with a light layer of granulated sugar, about 1 tsp.
Step 9
If you are using a kitchen torch, carefully torch the top of each brûlée, only until a golden amber color. If you do not have a torch, set your oven to broil and place ramekins on the top rack until golden amber, about 3-5 minutes.
Step 10
Repeat steps 8 and 9 once more to make the sugar topping a little thicker.
Step 11
Enjoy immediately.
