Instructions
Step 1
Wash all produce. Peel and dice onions. Grate carrot, apple, and ginger. Peel and mince garlic and ginger. Remove fat from beef.
Step 2
Heat oil in pan. Add onion and cook on low heat until softened, ~10 minutes. Increase heat and cook until gold. Do not caramelize.
Step 3
Add garlic, carrot, ginger, and apple. Cook for 2 minutes.
Step 4
In clean pan, cook beef over medium heat until browned outside. Do not burn.
Step 5
In clean pan, add flour and cook over medium heat until fragrant and gold. Add spices (cumin through pepper) and cook mixture for 2 minutes.
Step 6
In deep and wide pan, add spice mix, onion mix, and beef over medium heat. Add red wine, beef stock, and bay leaf. Stir.
Step 7
Bring to light boil, reduce heat and simmer, covered, for 1.5-2 hours. Add water if curry gets too low.
Step 8
Remove lid. Add instant coffee, chocolate, yogurt, honey, and worchestershire sauce. Stir and simmer uncovered for 15 minutes.
Step 9
Turn off heat. Remove bay leaf. Stir in butter. Season with salt and pepper to taste.
