Instructions
Step 1
In a small saucepan, put cream, garlic, oregano, chili pepper flakes and a few decent grinds of fresh pepper. Bring to a boil. then turn down and let it bubble away for 3 minutes. Don’t worry about the cream boiling, just don’t let it boil over. Stir regularly with a silicon spatula so that you can scrape down the sides. Take the pan off the heat, cover, and let it steep while the chicken cooks.
Step 2
Make chicken the normal way (see recipe on The Kitchn on making perfect chicken breasts).
Step 3
Make the orzo
Step 4
Prep and chop spinach
Step 5
Put the cream sauce back on the burner and bring to just under a boil. Add a dash of sea salt. Turn the heat down and let it simmer gently for 5 minutes, keeping an eye on the pan and stirring regularly. If it gets too thick, thin it out with the pasta water when you strain it.
Step 6
Mix orzo, sauce and spinach together. Slice chicken and put on top of the pasta mixture. Serve. Optional: top with crumbled bacon and/or Parmesan.
