Creamy Sun-Dried Tomato, Shallot, & Lemon Pasta

Instructions

Step 1
- Start boiling a pot of salted water according to pasta directions. Cook to al dente and complete next steps while the pasta is cooking. Remember to save some pasta water when you drain it!
Step 2
- Add oil and shallots to pan on medium-high heat and cook about 3 minutes, stirring occasionally.
Step 3
- Add Italian seasoning, basil, red pepper flakes, tomato paste, and lemon zest and juice and cook for another 5 minutes, lowering heat a little and stirring frequently.
Step 4
- Add cream and stir to mix. When the sauce starts to bubble, reduce heat to low-medium and add parmesan and spinach.
Step 5
- Add drained pasta and stir to coat. You can add pasta water 1 tbsp at a time if the sauce is too thick.
Step 6
- Top with a ball of burrata and enjoy!
