Instructions
Step 1
Cook pasta to 2 minutes less than package directions (very al dente). Reserve 1/2 cup pasta water and save for later when draining.
Step 2
Heat oil on medium high heat. Add shallots and garlic and sauté for 2-3 minutes. Add sliced mushrooms and cook until a bit crisp.
Step 3
Add seasonings and combine. Add cream, vegetable broth, and while stirring bring to a simmer, then reduce heat. Add parsley and stir.
Step 4
Mix together reserved pasta water and cornstarch as a thickener and add to sauce. Add pasta and finish cooking in the sauce, stirring constantly for 2 minutes.
Step 5
Serve with parmesan and parsley on top.
