Sousvide Chicken Sandwiches with Chipoltle Mayo

Ingredients
4 servings

2chicken breasts

salt

pepper

1avocado
sliced
1Chipotle Chipotle in Adobo Sauce
pepper, from a can of, minced, Freeze the rest for another time

½ cupmayonnaise

1 clovegarlic
minced or microplaned

0.5 lbbacon
cooked on foil-lined sheet pan in oven at 375F for 15-20 mins depending on how you like it cooked, turning once mid way through

Cheddar
or other sharp cheese

8slices whole grain bread
toasted
Instructions
Step 1
Pre-heat sous vide water to 143 F.
Step 2
Pinch liberal amounts of salt and pepper to both season both sides of the chicken breast.
Step 3
Place breasts in a ziplock bag and ensure there is no air in the bag using the displacement method (slowly lower your bagged meat into a pot of water, letting the pressure of the water press air out through the top of the bag. Once most of the air is out of the bag, carefully seal the bag just above the waterline.)
Step 4
Cook the chicken for 2 -2 1/2 hours.
Step 5
Prepare chipotle mayo by combining garlic, mayo and chipoltle. Season with salt to taste.
Step 6
Slice sous vide chicken.
Step 7
Assemble sandwiches and enjoy!
