1 x 28 ozcan whole peeled tomatoes
1yellow onion
medium, quartered
3 Tbspsalted butter
2 Tbspfresh thyme leaves
kosher salt
1 cupwhole milk
plus more as needed
3 Tbsppesto

Step 1
Preheat oven to 425
Step 2
Make the soup! In a Dutch Oven or oven-safe stockpot, combine tomatoes, onion, butter, thyme, and salt and pepper. Roast until onion is soft and fragrant, about 20 minutes. Let cool slightly.
Step 3
Use a slotted spoon, transfer roasted tomatoes and onion to a blender or food processor and add the milk. Blend until totes smooth, 1-2 minutes. Return mixture to dutch oven and cook over medium heat to warm through, 2-3 minutes. Stir in 3 tbsp pesto. Thin with more milk if you want. Taste and add whatever feels right in your soul.
