Instructions

Step 1
Heat the oil on high and fry the chicken for 5 minutes, stirring often. Turn the heat down to low, add onion, courgette and garlic and cook for 5 minutes until softened.
Step 2
Stir in the coconut milk and peanut butter. Half-fill the coconut milk tin with water and add to the pan. Bring to the boil, then cover with a lid and cook over a medium heat for 7 minutes, stirring occasionally, until the chicken is cooked.
Step 3
Add 1tsp of water to cornflour to make a slurry. Add slurry to the sauce and boil to thicken. Keep stirring.
Step 4
Serve with white rice
