Sushi Rice
1 cup rice - washed
1 1/4 cup water.
Bring to a boil, stir, then reduce heat to the lowest, lid on, for 20 min.
When done, take off heat for 5 min. Then, add 4 TBS of Mirin, fold and fluff with fork. Then let it sit for another 5 min.
