Instructions

Step 1
1. Add the spinach, coconut milk, diced tomatoes, garlic powder, ginger powder, cumin,and garam masala or curry powder to the slow cooker. Place the lid on the slow cooker and cook on low for 2 hours.
Step 2
2. Blend the spinach mixture in the slow cooker using an immersion until smooth. (If you don’t have an immersion blender, use a stand blender or food processor to blend until smooth. Pour the blended mixture back into the slow cooker.)
Step 3
3. Add the diced chicken to the slow cooker and continue to cook on high for 4 hours or on low for 6 hours. Season with salt and pepper, to taste.
Step 4
4. Serve the saag by itself or over the optional cauliflower “rice” and garnish with chopped fresh cilantro, if desired.
