medium, cut into 1 inch cubes
1onion
medium, chopped
2 clovesgarlic
finally chopped
1red bell pepper
medium, chopped
1 cupblack beans
drained, rinsed
1 cupcorn kernels
2 tablespoonsolive oil
1 teaspoonschili powder
¼ teaspoonground cumin
¼ teaspoonground smoked paprika
¼ teaspoonsea salt
½ teaspoonground black pepper

Instructions
Step 1
Preheat oven to 200 c. Line large sheet pan with parchment paper. Set aside. Combine sweet potatoes, onions, garlic, bell pepper, beans, corn, oil, chili powder, cumin, paprika, quarter teaspoon salt, and quarter teaspoon pepper in a large bowl, toss gently to blend. Play sweet potato mixture on a pan. Bake for 18 to 20 minutes, stirring after 10 minutes. Create eight Wells in Sweet potato extract. Gently crack an egg into each well. Season eggs with remaining quarter teaspoon salt and remaining quarter teaspoon pepper. Bake for 8 to 10 minutes, or until Eggs are set. Garnish with cilantro, serve immediately.
