Instructions

Step 1
In a pan, cook beef mince and chorizo until oils start to expel
Step 2
Add 4 cloves of garlic, 1 tbsp paprika and 1 tbsp cumin to pan. Plus a little salt and pepper to taste.
Step 3
Once cooked through, add in 1 teaspoon of turmeric, 1 teaspoon of oregano, half a packet of tomatoes, 2 chopped peppers, 1 chopped onion and some chopped chillies (optional) and cook for 5 minutes until veg starts to soften.
Step 4
Then add in a tablespoon of of tomato purée, the juice of one lime and your vegetable stock. You can then add in your rice. You should have some stock left over, this is to add throughout the cooking process if needed.
Step 5
Cook for approx 25 mins, checking if rice is cooked. If not, add more stock
Step 6
While cooking, make a sauce of 5tbsp mayonnaise, paprika, lime juice, hot sauce and some chopped coriander
Step 7
Serve with some chopped fresh tomatoes, onions and some lime
