Ingredients

⅓ cupdry vermouth
1garlic clove
pressed
3 cupshalf-and-half
3 Tbspcornstarch
1 tspsalt
½ tspblack pepper
12 ozshredded Swiss cheese
divided
1 x 12 ozroasted red bell peppers
jar, drained
3 cupsrotisserie chicken
finely chopped
1 x 5 ozfresh baby spinach
chopped
¼ cupfresh basil
chopped
1garlic clove
pressed
1 tspseasoned pepper
8egg roll wrappers
Instructions
Step 1
Preheat oven to 350°.
Step 2
Bring vermouth and garlic to a boil in a large skillet over medium-high heat; reduce heat to medium-low, and simmer 7 to 10 minutes or until vermouth is reduced to 1 Tbsp.
Step 3
Whisk together half-and-half and cornstarch.
Step 4
Whisk salt, black pepper, and half-and-half mixture into vermouth mixture; bring to a boil over medium-high heat, whisking constantly.
Step 5
Boil, whisking constantly, 1 minute or until mixture is thickened.
Step 6
Add 2 cups cheese; reduce heat to low, and simmer, whisking constantly, 1 minute or until cheese is melted and sauce is smooth.
Step 7
Remove from heat.
Step 8
Process peppers in a blender until smooth.
Step 9
Pour into 4 lightly greased 7-x 4.5-inch baking dishes.
Step 10
Stir together remaining 1 cup cheese, chicken, next 4 ingredients, and 1 cup cheese sauce.
Step 11
Divide chicken mixture among wrappers, spooning down centers; gently roll up.
Step 12
Place, seam sides down, over red pepper puree in baking dishes.
Step 13
Top with remaining cheese sauce.
Step 14
Cover with aluminum foil.
Step 15
Bake, covered, at 350° for 15 minutes or until thoroughly heated and bubbly.
