Easy Prawn Toast

This is much easier and quicker than you would expect and results in a much juicier prawn toast than what you normally get in Chinese take-away shops. Perfect for starters or when guests are around.

For the Paste

Step 1
To make the paste, simply blend all ingredients together in a food processor. You can mince the prawns, and all other ingredients, by hand with a very sharp knife for a coarser texture.
Step 2
Cut the bread in 4 equal triangles, spread a spoonful of paste evenly on top
Step 3
Spread the sesame seeds on a plate, and push each piece of bread (paste-side down) so that it’s completely covered by the seeds
Step 4
Heat some high-smoke point oil to 180c (or 360f) and add the toasts in, facing down. Cook for 2 minutes then turn and cook for a further 1 minute. Make sure the temperature is right! If too low the toasts will take too long to cook and will absorb too much oil
Step 5
Take out on to a paper towel and rest for a minute. Enjoy!
