Apricot Chicken

This simple apricot chicken is one of my favorite dishes. Everybody loves it; leftovers are always just as good the next day.

Instructions

Step 1
In shallow microwave-safe dish, combined first seven ingredients; stir in chicken. Cover & microwave on (3 min.), stirring once.
Step 2
Add green pepper & cashews. Cover; microwave (2-4 min.) until chicken is no longer pink, stirring once.
Step 3
Let stand (3 min.) Serve with rice; sprinkle with red pepper flakes.
Step 4
OPTIONS: Use pork instead of chicken. Add additional ingredients like pineapple, mandarin oranges, snow peas or broccoli.
