1 x 15 ozchickpeas
can, drain & rinse
1 cupvegtable broth
or water, or 1/2 cup of water & 1/2 cup broth
2carrots
peeled & chopped
1 x 15 ozcan diced tomatoes
fire roasted are good
1 ozGreen olives
TJ's "hand full foil pack
2 Tbsapricots
chopped
0.5 Tbsbrown sugar
1 tspcurry powder
½ tspcinnamon
¼ tspsalt
Black pepper
Instructions
Step 1
Combine items in Instant pot
Step 2
5 minutes at High pressure
Step 3
Natural release (~20 minutes ) Careful to release steam
Step 4
Once unlocked, taste- add more pepper or salt as needed
Serve with brown rice and salad
Step 5
Rice: 1 3/4 cups water +1 cup rice (rinsed and drained)
Step 6
Cook rice on simmer for 45 minutes.
Step 7
Let rice stand covered for 15 minutes
