1.5 lbsstew beef

3 oztomato paste

2 ½ cupspearl couscous

14 ozcan chickpeas

Instructions
Step 1
1. In a pressure cooker/Instant Pot, sear the onion and beef (or chicken) with the crushed garlic until the onions soften and the meat has a nice golden-brown color from searing. If you don’t have a pressure cooker, you can cook the meat for a few hours until it is tender, adding liquid as needed.

2. Add the tomato paste and spices to the pot and mix well with the meat. Then add the finely chopped cilantro and the 6 cups of stock.

3. Pressure cook the meat on high for 30 minutes.

4. While the meat is cooking, boil water in a steamer pot and prepare the pearl couscous. Mix 1 cup of water, 1 tsp salt, and the couscous together. Place the couscous in the steamer basket and steam cook for 15 minutes. If you don’t have a steamer, you can add the couscous directly to the stew later on, but traditionally it is steamed.
Step 5
5. Once the meat is ready, open the lid and add all the diced vegetables, pearl couscous, and chickpeas to the pot. Let them simmer for 10-15 minutes until the vegetables are soft.
Step 6
6. Serve hot with lemon wedges on the side for garnish.
