Instructions

Step 1
Season tenderloin with salt and pepper
Step 2
Heat avocado oil for 1 minute. Sear pork for 2-3 minutes and flip
Step 3
Remove pork from skillet and cut 12-15 small slits on each side. Cut half the apple into very thin slices. Place garlic and apple into slits.
Step 4
Combine broth, soy sauce, and vinegar in crockpot
Step 5
Place pork in slow cooker. Chop remaining apple and spread it evenly around pork. Add carrots to slow cooker.
Step 6
Cover cooker and cook on high for 4 to 6 hours until pork reaches an internal temp of 145 and veggies are soft.
