Instructions

Step 1
Pre the vegetables and salt to draw the water out and soften. Leave for 10 minutes. Rinse under cold water, drain and dry well.
Step 2
Whilst you wait, pickle the red chillies with equal parts 100ml vinegar and 100ml water with 1 tbsp sugar.
Step 3
Mix the peanut butter, sriracha, fish sauce, juice of one lime, rice vinegar, soy sauce and ginger garlic paste.
Step 4
Toss the vegetables through the dressing, add in the cooked salmon, freshly chopped coriander, pickled red chillies and a sprinkle of roasted sesame seeds.
Step 5
Leave for 10 minutes before serving to allow the slaw to mellow and 'cook' slightly in the dressing and just dive right in.
